I decided to make a second loaf a few days later and had already premixed my yeast and sugar when I realized that I only had about 3/4 of a cup of wheat flour left. Not being one to throw away perfectly good ingredients, or back down from an experiment I kept on going and used all purpose flour in place of the rest of the wheat flour. My recipe went something like this.
- 6oz warm water
- 2, 1/4 teaspoons Bread Machine yeast
- 3/4 whole wheat flour
- 2 cups unbleached all purpose flour
- 1 teaspoon salt
- 1/3 cup granulated sugar
- 1/4 cup olive oil
- 1 large egg
First place warm water, sugar and yeast in the a small bowl. Let sit for 8 minutes or until it foams. Then place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Basic Bread cycle and if you can choose how dark or light choose light setting; press Start.
When the dough has raised once and second cycle of kneading begins, turn machine off. Reset by pressing Start once again. This gives the dough two full raising cycles before the final raising cycle prior to baking.

Somewhere during the second cycle of kneading I turned my machine off and attempted to turn it back on again, but it wouldn't let me reset any of the settings. I couldn't adjust the size of the loaf, the bake cycle, the color of the crust, or anything. I turned it on and off, plugged and unplugged it, and read the manual at least 3 times before I turned, once again, to the trusty interwebs.
I quickly Googled my problem and found a forum stating that I needed to plug the machine in, hold down the start/stop button until it turns off, and then hit the timer button and I would be able to use the controls again. Sure enough that worked like a charm leaving me wondering why I ever bother with manuals in the first place. Also, @Panasonic, this is a crazy way to work your machine, don't you think it's worth a mention in the manual?!?
The results of this hodge-podge loaf were better than expected. It was a light and fluffy white loaf with a flaky crust that my husband loved. I tried to cut it while it was still too warm and sort of squished the loaf, but it still tasted great. I will definitely be making this bread again in the near future.
